Shrimp cream is a light and tasty dish that we make as a starter and give a touch of our menu special day. This is not a typical recipe for Christmas, but we can include it among our proposals for Christmas recipes, then as a starter can be as special as a more typical prawn cocktail. Ingredients Prawns Cream: 600 g peeled prawns. 3 cups fish stock. 1 onion.
1 carrot. 1 red pepper. 100 g of mushrooms into slices. 1 cup cream (whipping cream). 1 / 2 glass of sherry. 3 tablespoons flour. 125 g of butter. Sal.
Chop the onion very thin, peel and chop the carrots and peppers. We cast 100 gr. butter in a pan and fry in it the onion, pepper, carrots and mushrooms, about 10 minutes. Add the prawns, saute 5 minutes, and reserve some to garnish the dish. Pour the broth to a boil and put it all together, about 15 minutes and spent the whole seasoned with a blender, until a fine cream. Add the sherry and cook for 5 more minutes. Melt the remaining butter in a separate saucepan, add the flour, stir, pour the cream and boil everything until it thickens. Mix cream with mashed prawns and heat it all together five munutos more. This step will make the cream thickens, the amount of flour will determine the depth grading. Serve the cream into soup bowls and decorate with prawns that have been reserved.
